Serves 4 Preparation Time: 30 minutes Refrigerating Time: 30 minutes parts: Cucumber (sliced) 8 oz Caster sugar 2 tsp Salt pinch Rice vinegar 2 tsp process: Mix all the ingredients in a large bowl. Set aside for 30 minutes. After 30 minutes, if there is any water released from cucumber, throw it away. Mix well. Chill in the refrigerator for at least 30 minutes before serving. Egg Drop Soup This egg drop soup is refreshing especially on a cold day. This is a must try soup. Serves 4-5 Preparation Time: 5 minutes Cooking Time: 10 minutes parts: Chicken stock 15 oz Tomato (cubed) ½ cup Eggs (lightly) 2 Corn flour 2 tbsp (mixed in 3 tbsp of water) White pepper 1 tsp Salt ½ tsp Water 1 cup technique: In a pan, add chicken stock and water, bring a boil. Add the tomatoes, white pepper, salt and corn flour mixture. Let it simmer until thick. Stir the soup well. Now add lightly beaten eggs into soup, stir. Let it simmer for 2-3 minutes; pour out into individual serving bowl. Serve immediately. Chicken Corn Soup This chicken corn soup is famous all over the world in every age group. It is tasty as well as healthy and nutritious. Serves 3-4 Preparation Time: 5 minutes Cooking Time: 15 minutes constituents: Minced chicken 6 oz Chicken stock 15 oz Corn flour 2 tbsp (mixed into 3 tbsp of water) Sweet corn 4 oz Water 1-1/2 cup White pepper ½ tsp Salt ½ tsp Eggs (lightly beaten) 2 Coriander leaves for garnishing technique: In a pan, heat up the chicken stock. When it comes to boil, add chicken mince. Remove any foam that comes onto the surface of the soup. Add sweet corn, white pepper, salt and corn flour paste in the soup. Stir well. Pour the beaten eggs slowly into the soup in a circular motion. Stir after 2-3 seconds and let it simmer for 1-2 minutes. Pour in a serving bowl and garnish with fresh coriander leaves, serve hot. Sweet Dumplings This chicken corn soup is famous all over the world in every age group. It is tasty as well as healthy and nutritious. Serves 3 Preparation Time: 10 minutes Cooking Time: 15 minutes constituents: Plain flour 1 tbsp Corn flour 3 tbsp Egg whites 4 Red bean paste (plain) 4 oz Caster sugar 3 oz Oil as required Icing sugar for dusting strategy: Heat 1 tbsp oil in a wok and add bean paste, sugar and desiccated coconut. Fry for 2-3 minutes. The mixture should become smooth. Take out on a dish and let cooling. Meanwhile, beat the egg whites until eventually stiff peaks shape. Stir in plain flour and corn flour. Mix with a spatula until well combined. In another pan, heat oil for deep frying. Make 12-13 even sized balls from the bean paste mix.
